Steam Cloud can overwrite your local save. Disable Cloud Saves temporarily:

Backing up your save allows you to protect your progress or return to a specific point if your fish dies unexpectedly.

Modify XP/level

Change fish stats (health, damage, speed)

Spawn items or change world state
